A crisp and refreshing slaw with creamy blue cheese, sweet apple and crunchy almonds that’s perfect for summer!
One of my favorite things about summer is all of the light and refreshing salads that I get to make. When the temps hit 80 and above, my husband craves foods that keep him cool. The last thing he wants to take for lunch is something hot! He requests my three bean salad on a weekly basis (it’s his all-time favorite), but he is always excited to try something new.
Let me stop right here and give props to him for that. I know a lot of husbands that are meat and potato kind of guys, and there is nothing wrong with that, but I feel pretty lucky to have a guy that shares my love of food and will try just about anything!
I’ve been eye-balling these bags of broccoli slaw at Trader Joe’s for weeks now and finally decided to find a way to use them. I’ve actually never bought or tried broccoli slaw before today and now that I have, I foresee a lot of it in our future!
I’m pretty sure that in addition to green onions, we may also have a slight addition to blue cheese. The sharp flavor and creaminess are addicting. Honestly, we often just sit down with a hunk of blue cheese, some crackers or bread and a bottle of wine when we don’t feel like cooking.
The combination of sweet apple, sharp blue cheese, and crunchy almonds in this slaw was perfect! The only thing I might do differently next time is adding a handful of dried cranberries because I think another layer of sweetness and texture would be delish!
If you don’t like blue cheese you could swap it out with another kind of cheese or just leave it out altogether. Any kind of apple would be fine, but I suggest one that’s not too tart. The sweetness of the apple balances out the salad. I used a Gala apple, which is sweet but still nice and crisp. Enjoy!
