Three Bean Salad With Olive Oil Dressing

Ingredients

  • 1 15.5- once can light red kidney beans rinsed & drained
  • 1 15.5- once can dark red kidney beans rinsed & drained
  • 2 14.5- ounce cans green beans rinsed
  • 1 small onion thinly sliced
  • 2 cloves garlic crushed
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1/4 cup sugar
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Whisk the dressing ingredients in a large bowl and taste to adjust.
  • Add all remaining ingredients and mix well.
  • Chill for at least 3-4 hours, stirring frequently, from the bottom up, so the dressing has time to flavor all the ingredients.
  • Serve chilled or at room temperature (which is how I prefer it).
