Italian Baked Eggs With Spinach & Tomatoes

Ingredients

  • 2 large eggs
  • 6 grape tomatoes, quartered
  • 1 cup fresh spinach leaves, chopped
  • 2 tbsp heavy whipping cream
  • 2 tbsp freshly grated Parmesan cheese
  • 1/4 tsp dried oregano
  • 1 pinch salt
  • 1 pinch pepper
  • Non-stick cooking spray.
  • Fresh basil and additional Parmesan for garnish

Instructions

  • Preheat oven to 325 degrees F
  • In a small bowl, mix everything together except the eggs.
  • Spray your ramekins with non-stick cooking spray.
  • Divide the spinach mixture between two ramekins.
  • Make a well where you want the eggs and carefully crack one egg into each ramekin.
  • Bake until the whites of the eggs are just set, about 10 - 12 minutes.
  • Garnish with fresh basil and additional Parmesan cheese.
