In a perfect world, I’d have time to make a homemade meal for my family every night. But the reality is, that only happens four or five nights a week. Some nights I don’t have time, and some nights I just don’t feel like cooking.
It’s nice to have a backup plan. I like to keep a few go-to meals in my freezer, but finding premade meals that taste good and are good for you is a challenge. I have tried countless varieties. I picked up several varieties but decided on the shrimp scampi tonight. Pasta sounded good, but I also wanted something fresh and light. It’s made with linguini pasta, plump, tender shrimp, and a sauce made with lemon, butter, and fresh garlic.
You can cook these in the oven or the microwave, which is what I chose to do. Ten minutes later, I had dinner on the table!
After taking my first bite, I was pleasantly surprised by two things. The pasta is perfectly cooked, and so is the shrimp. The shrimp are actually raw before they cook, which is very smart on Michael Angelo’s part. This prevents them from getting overcooked, so they come out tender and juicy.
There was just the right amount of sauce, and you can see flecks of real garlic of running through it. I always have fresh herbs on hand, so I sprinkled on some Italian parsley for garnish. The portion was perfect, and they don’t skimp on the shrimp! If you have a large appetite, pair this with a small salad or a vegetable for an easy, healthy weeknight meal!
