This week’s budget recipe is something I came up with while trying to do something clever for my hubby with pulled pork. It kills my soul to waste food. Seriously, I’ll eat spaghetti for three days before I’ll throw it away! So…I was determined to figure out a way to use up the pork. Since I also had some french bread that needed to be used, I thought a panini would be perfect. We LOVE paninis in my house. I think you can put anything between two slices of bread, press it and it’s “too-licious” (as my nephew would say) ~
Ingredients
- 1 Cup Leftover Shredded Pork
- 1/2 Cup BBQ Sauce
- 1/4 Finely Chopped Onion
- 1/4 Cup Finely Chopped Banana Peppers
- French Bread (ciabatta would work well too)
- Provolove Cheese
- Spicy Mustard
Directions
- Mix the pork, BBQ sauce, onion and banana peppers
- Slice the bread and spread each slice with mustard.
- Top a slice of the bread with, 1/2 a slice of provolone, appx. 2 tbs of the pork mixture, another 1/2 slice of cheese and finally the second slice of bread.
- Liberally spray the outside of the sandwiches with butter spray.
- Lay sandwiches in a skillet over medium-low heat and top with a piece of foil.
- Fill a large pot about half full of water. Not too much…you want them pressed, not smashed.
- Place the pot on top of the sandwiches.
- Check the bottom after 2-3 minutes. Once they are brown, flip and top with the foil and pot again.
- When the second side is brown, serve immediately.
