$10 Dinner: Quick and Easy Vegetable Beef Soup

My family loves soup of any kind but vegetable soup is our favorite. It is so good for you and so economical. It also yields plenty of leftovers which we love! This is also a very easy recipe to adapt. If you want a different combination of vegetables, go for it! The method is simple, brown the meat to get good color (which is flavor), deglaze with broth (for the richness), add your veggies and spices and let is cook! We like brothy soup, but if you like yours chunkier, you can add more vegetables or less liquid.

INGREDIENTS:

* 1-2 Pounds Rump Roast Cubed (any cut of lean beef will do)
* 1 16-Ounce Bag Frozen Recipe Beginnings (Onions, Celery, Green Pepper) **
* 1 16-Ounce Bag Frozen Vegetable Soup Mix – (The mix I buy has carrots, corn, okra, green beans and Lima beans) **
* 2 Cloves Garlic Minced
* ½ Head of Cabbage Chopped
* 1 Can Fire Roasted Diced Tomatoes
* 2 Cups Water
* 2 Cups Tomato-Vegetable Juice Cocktail
* 1-Quart Beef Broth
* 1 TSP Italian Seasoning
* Salt and Pepper to Taste

DIRECTIONS:

* Cube beef into bite size pieces and season with salt and pepper.
* In a large pot over medium-high heat, add a couple tablespoons of olive oil and let it get very hot. Add the meat (you want to hear a sizzle) and brown it on all sides. Tip: Don’t stir it too much or it won’t brown. You want to get a good ‘crust’ of color which will add a richness and flavor to the soup.
* Deglaze the pan with the water and let simmer for about a minute stirring up all the bits at the bottom of the pan.
* Add all the remaining ingredients, except additional salt and pepper, bring to a boil, turn down to low and simmer gently for an hour.
* Season with salt and pepper to your taste, then serve with a big loaf of crusty bread and a salad.
* Serves four generously with plenty of leftovers to either freeze for another meal or lunch/dinner the next day!

** Most grocery stores now carry pre-cut frozen vegetables. At Kroger, they are called Recipe Beginnings and they come in a variety of combinations. My favorite is the diced onion, celery and carrot because these are three ingredients I use ALL the time in my cooking. Instead of chopping, all I have to do is open the bag and use what I need so they are HUGE time savers. They are also very economical. At Kroger, the 16 ounce bags go on sale 10 for $10 all the time and I usually get 2-3 meals out of one bag. This is one thing a quick cook should never be without!
